What is kombucha?

 001                                    When the kombucha culture ferments tea, it produces a celluliose mat on the surface of the liquid called the SCOBY or Symbiotic Culture of Bacteria and Yeast. This mat houses the bacteria which protects it from the UV light and allows for efficient fermentation. This material grows and thickens depending on how long it is left to ferment, the result is that sheet like material made of pure cellulose can be extracted and treated with natural wax to make sustainable bio leather that has a remarkable material and translucent properties.
